Even though a curing zombie villager is technically a hostile mob, the player has invested resources into turning it into a useful mob, so it shouldn't be possible for them to de-spawn. This issue can of course be prevented by the player staying within 32 blocks of the zombie until it's cured, but that could be a waste of precious time.

Most likely a zombie was able to pathfind to the top, jumped in, and ate the villagers. Then either it isn't on Hard and they just died, or they became zombie villagers but died in the sunlight. i dont remember clearly what i typed, but i named the wandering trader, give it a nametag, and then use a command block nearby to constantly set its DespawnDelay to 500, so that it will never reach 0 and despawn.
In Java Edition a zombified zombie villager does not despawn if the player has traded with it at least once prior to its death, but unlike all other persistent mobs it still counts toward the hostile mob cap. If the zombie villager picks up any item however, it remains persistent but is excluded from the mob cap.
